Yesterday at the spur of the moment I decided to bike over to Whole Foods because I needed another carton of eggs. I go through about 3-4 dozen of Jumbo cage-free eggs per week and at $3.99 a pop that comes to about $12-$16! Anyhow I eat mostly white and I use fresh eggs for baking. I was short on time so I decided to go to the Whole Foods near me. The only drawback is the large bridge that I have to bike over in order to get there. It is both a bit dangerous (risking my life=adrenalin rush) and a pain in the ass. Well I wish I had gone to a different location because as I was biking back, one side of the fucking bridge was going up. I waited and waited for it to come back down.....nothing. There were only two boats that needed to pass underneath it and once they were gone the bridge still wouldn't go back down. I was getting pissed thinking about how I needed to eat my next meal and the possibly rotting onion sprouts in my bag. The veins in my head were about to combust, bridges that move suck. So I wound up having to bike two miles out of my way to take a different route and when I got home that bridge still hadn't gone down! I feel truly sorry for any runners that may have been running and wound up stuck because if they had planned a 5k run, they probably wound up running a marathon.
Anyhow this is what I needed the eggs for. I make a delicious creation out of butternut squash. Actually several creations. I made gluten free pumpkin pie filling muffins, butternut squash muffins and butternut squash quiche muffins. Everything is sugar/yeast/dairy/gluten/wheat free. Here are the ingredients for each creation. I don't use recipes, I make everything up myself.
Gluten Free Pumpkin Pie Filling Muffins, makes 2 muffins
-57g organic canned pumpkin
-1 packet stevia
-1tsp non-aluminum baking powder
-1tsp cinnamon
-1 tsp non-alcohol vanilla extract
-1 jumbo egg white
-7g coconut flour
-3 TBSP unsweetened coconut milk (sometimes I use hemp milk)
(Pumpkin Pie Filling Muffins)
Gluten Free Butternut Squash Muffins, makes 3 muffins
-100g cooked butternut squash (mashed by hand)
-1 jumbo egg white
-1 packet stevia
-1tsp non-aluminum baking powder
-7g coconut flour
-14g millet flour
-3 TBSP unsweetened coconut milk

Gluten Free Butternut Squash Quiche Muffins, makes 3 muffins
-100g cooked butternut squash (mashed by hand)
-1 whole jumbo egg
-1 packet stevia
-3 TBSP unsweetened coconut milk
-5g golden flaxseed meal
-1 tsp non-aluminum baking powder
-3g each of poppy seeds, sesame seeds, Salba seed and Chia seeds
per serving: 67 calories, 3.6g protein, 6.5g carbohydrates, 2.9g fat
