I try not to eat any added sugar, and this time of the year it is really super difficult because everything is pumpkin and sweet. And pumpkin just so happens to be my favorite everything. If it were legal I would marry a pumpkin and quite frankly the movie "American Pie" would have been more enticing if the pie had been a pumpkin pie. I have bought an expensive brand of pumpkin butter at Whole Foods Market and I finished the jar off, which had 30-plus servings in as little as seven days. Whoa that was a lot of sugar, so I figured I should make my own pumpkin butter and make it without added sugar so if I do finish it off, it won't be such a big deal.
Ingredients:
-One can of organic pumpkin (you can use fresh, but I'm lazy)
-2 tsp each of ground cloves, pumpkin spice, cinnamon
-2 tsp vanilla extract (alcohol free preferably)
-1/4 cup Bragg's Apple Cider Vinegar
-4-5 packets of stevia
Directions:
1. In a pot combine the pumpkin and apple cider vinegar
2. Bring to a boil and then reduce heat to simmer
3. Stir in the remaining ingredients and allow to simmer
4. Keep stirring until the mixture thickens and resembles pumpkin butter
5. Transfer to a glass jar, or a couple
